The Art of Nori Making

Nori is made using a method much like traditional paper-making — the seaweed is harvested, washed, finely chopped into a pulp, then poured into thin sheets and dried. This elegant technique allows for a delicate, even texture that’s ideal for sushi and wraps. Interestingly, it’s said that the modern process of sheeted nori may have been inspired by a Welsh woman who brought her knowledge of laverbread preparation to Japan — where seaweed had already been revered for centuries. Whether myth or history, it’s a beautiful example of how sea vegetable traditions have flowed between cultures, connecting the Celtic coasts to the shores of the Pacific.

🐬 What “Dolphin-Friendly” Means for Nori

Dolphin-friendly nori refers to sustainable harvesting methods that do not disturb marine wildlife, particularly dolphins and other intelligent sea creatures. This means:

  • The seaweed is farmed rather than wild-harvested, in designated ocean areas or controlled environments

  • Farming methods avoid the use of large-scale dredging, mechanical trawling, or netting, which can entangle or disorient marine mammals

  • Harvesting is done carefully and seasonally, so as not to disrupt natural migration patterns or ecosystems

Our Raw Living nori is farmed in clean coastal waters, off the coast of Japan, and is part of an industry that has evolved to be both sustainable and minimally invasive

Grown in Pure Waters, Crafted with Precision

Our nori is cultivated in a single, pristine location just south of the Sea of Japan, within a 4,000-acre growing area officially classified as “Certified Organic Growing Waters.” To meet this international standard, the waters are tested monthly and must remain 100% clean for a minimum of three consecutive years before gaining certification — a true testament to the purity of the environment.

Once harvested, the seaweed is brought to the production facility, where it is carefully inspected and sorted. Only the top 15% of the entire harvest — the highest grade — is selected to become Raw Living nori sheets. The sheets are then gently dried at low temperatures, cut to size, and packaged with care to preserve their natural flavour and nutrient profile.

Truly Raw: Never Toasted, Gently Dried

Unlike most nori on the market, which is toasted during processing, our nori is kept completely raw. It is dried at low temperatures below 40°C, preserving its natural enzymes, nutrients, and vibrant flavour. This gentle drying process ensures that you receive the nori in its purest, most unadulterated form — exactly as nature intended.
