Description

Yacon is a root vegatable from Peru, similar to a parsnip. High in potassium and antioxidants, it is most well known for it's high fructooligosacharide content - a sugar that cannot be absorbed by the body - good news for those with diabetes. It is naturally low-calorie and doesn't raise blood glocose levels, measuring 1 on the Glycemic index.

It is illegal to export the whole yacon root out of Peru, which is why it is unfamiliar to us in the West. Plus, until recently, it was outlawed under the EU Novel Foods Act. It was passed for sale in the EU in 2014.
